Ingredients:
1 cup arrowroot powder
3/4 cup jaggery, grated
1/2 cup grated coconut
1/2 tsp cardamom powder
2 cups water
1 tbsp ghee
Instructions:
Roast Arrowroot: Dry roast the arrowroot powder in a pan until it's lightly aromatic. Remove and keep aside.
Make Jaggery Syrup: In the same pan, add water and jaggery. Stir until the jaggery dissolves completely and forms a syrup.
Cook Arrowroot with Syrup: Lower the flame and add the roasted arrowroot powder to the jaggery syrup gradually, stirring continuously to prevent lumps.
Add Coconut and Cardamom: Once it starts thickening, add grated coconut and cardamom powder. Continue stirring.
Ghee for Gloss: As the mixture thickens and starts leaving the sides of the pan, add ghee and mix well.
Serve: Transfer the Kali to a greased plate, spread it evenly, and cut into desired shapes once slightly cooled.
